Enchilada Inspired Egg Bake

On this new healthy living journey I refuse to give up flavor. I've always been a sucker for Mexican Food which inspired this dish. Finding new and creative way to meet my protein goals has been challenging but I am inspired when I discover delicious protein options.


For this dish fill your Ramekin (oven proof dish) with

~ Ricotta Cheese (I used whole milk ricotta)

~ Enchilada Sauce

~ An Egg

~ More Enchilada

~ Top with Avocado


You can choose to poach the egg on the stove-top or bake at 400 degrees for approximately 15 minutes or until desired doneness.


This dish has approximately 8 Grams of Protein and just over 100 Calories.


* Nutritional values are based off of the packages in my pantry ;)
